Starting her career in Minneapolis/St Paul as a host, she quickly found her passion in the restaurant industry. At age 19 she became the Maitre’D at the famed Brasserie Zentral. Within a few years, she was found bartending at bourbon bars working closely with celebrity Chef Justin Sutherland. Dae has been a private bar consultant for numerous establishments and expanded into restaurant management by the age of 23. Overseeing multiple high volume and fine dining establishments. Before arriving in New York, she was the General Manager at Kyatchi - the first fully sustainable Japanese restaurant in the midwest.
She has a passion for service, art and travel. Dae’s well rounded appreciation for Wallsé’s food and art stems from childhood summers eating schnitzel in the Alps.
